You have to bend little metal tabs to take the switch apart. You can reset the metal strip and re-assemble the switch. When the metal strip heats it pops to an inverted arch shape and releases the tiny switch. There is a 'clicker' bi-metal strip which is meant to hold a tiny microswitch device in the closed position. Some of the non-resetting switches on top of the cavity can be taken apart and reset. I may even still have some laying in a box of microwave parts. If you can't find a replacement at a parts store check with an 'appliance repair guy' as they may have something pulled from a used oven with a bad maggie or transformer. They are both normally closed and in most cases carry the full load current of the oven so that when they trip the thing goes totally dead!! Don't jump them out, if you get a real thermal issue in the future the oven won't shut down and may cause a kitchen fire. It is considered a 'safety' issue assuming if your old one tripped it was from a cooking fire and there may be hidden damage. The other was on top of the cooking cavity and is NON-RESETTING and most appliance repair parts stores won't sell you one or even sell you an equivalent. One was on the side of the magnetron tube and was a self resetting device, round with two 1/4" spade lugs.
